The Ruffoni roasting pan you are wanting is a work of art. Truly. I would be scared to use it. Look forward to photos if you decide to pull the trigger. As an old-line cook and not as rich as most, I will stick with my cast iron and steel pans.
Tashkent is so much better than FD. But they really aren't comparable. One has Virginia, one doesn't. One has too much latakia (FD), and one is balanced. Just shows how tastes are different. Peretti Royal is better match for comparison. But I find it smoother than FD, too.
What is the typical amount of Latakia found in crossover blends? Yes, I know most here are not blenders. I am only looking for an estimate. I have too much Latakia and too many Aros that will not be smoked or only smoked as a last resort. I would like to make a mix that will make them more...
I find some Burleys destroy my taste buds with bitterness while others do not. I guess I will risk it and try Brunello since it has such a great reputation....and BTW it has to have been concocted by a witch.
Peretti Tashkent, Oriental 40,....you can add a quality Virginia, maybe a stoved Virginia, to the Tashkent to create as Oriental forward VaOr you can imagine.
