Evan BIB is one of the best bargains out there. I personally would not seek to smooth it out, I like its snappiness.

A lot of people pair goose liver pate with a Sauternes, which I think not a great match as Sauternes tend to be overly sweet, unless from a less hot/ripe year.
A sweet wine from the Loire, Alsace or Germany with their lower sugar and higher acidity makes for a better match, in my opinion.
Having a glass of Syfany Tramin Orange Czech Wine.
This says IPA but doesn't drink like one, tasty.
I’m a red guy big time but this can be described in One word…unctuous No oak Fermented in stainless 
ASKUR No. 78 Stout. Surprisingly, I didn't have this Icelandic stout the last time we were here. Slightly sweet with some nice roasted coffee notes, not overly plummy or raisiny (which is a good thing).
