Evan BIB is one of the best bargains out there. I personally would not seek to smooth it out, I like its snappiness.
A lot of people pair goose liver pate with a Sauternes, which I think not a great match as Sauternes tend to be overly sweet, unless from a less hot/ripe year.^^ My late mother (God rest her Soul) made the best goose liver pate...........
I never got her recipe, and it pains me forever, that stuff was the best!!
I've made it several times, but just can't capture what she did..........
A good bottle and and a great pate is Heaven!!!............
