Favorite: An interesting omelet*, then scrambled, deviled, plain hard boiled.
I wouldn't eat eggs as a kid (mso said also), but grew to like them except to this day soft eggs with the yolk and white separated nauseates me. I even avoid stoves where they are being cooked. Something in the odor as well as mental block.

I wouldn't even touch eggplant for a while due to the name!

* There are many. Most common for me is good cheese, smoked ham, topped with sour cream. Chives if I've got them. As a kid it was jelly omelets.

Anyone else got good ingredient ideas?

A dozen scrambled eggs. with which I would love to have bacon or sausage, but given my denture transition, that would seem eternally forestalled.

I used to eat them over-easy, but with a tremor that preparation is a thing of the past.

If someone is making them for me like at a restaurant I'll take poached or soft boiled. If I have to cook for myself, over easy.
