Birria Tacos made with an elk roast. Refried beans and mashed sweet potatoes on the side.
I'm new with birria, but dig it. After I had my fill of tacos, I used the broth for a birria ramen.

While I like roast beef, have never been a big fan of it as left-overs til tonight. Warmed up some, put it on a toasted bagel with cheese topped by Herdez medium guacamole salsa. Now that's a fantastic sandwich. I like this better than the first meal of it. The secret is the salsa.
