Mmmm, potato salad. Mustard or Mayo?? This preference seems to differ even here in the south.

North Carolina style pork pull when in that part of the country. Cajun somethin' in Louisiana, beef or Tex-Mex in Texas, Arkansas white bar-b-qued chicken. Having lived in some southern states I'd be hard pressed to ID "Southern" cooking. It's a big region with many local dishes and cuisines. I can eat low on the hog when such is offered. German in Texas is great. I remember hot dawgs at the Varsity during a visit to that part of the country.

Don't forget a vinegar based potato salad (with crispy bacon). Either warm or cold is tasty.

My family also does a potato salad with garlic, onions, herbs, lemon juice, and olive oil.

Hush puppies go with every dish or biscuits, they're not just for breakfast. Fried fish is common but pork is king in Eastern NC.

Yes, a German potato salad with vinegar added while the potatoes are warm so the flavors absorb.

Vinegar flavors also go well with bbq since the acid cuts the fatty richness (like pulled pork with a Carolina vinegar sauce made of just cider vinegar, black and crushed pepper, a squirt of ketchup, and a sprinkle of sugar).

Southern food is influenced by so many cultures it's mind boggling. Native American, African, Spanish (Spain), German, Scottish, English, I'm sure I missed a few. It's the melting pot of American cuisine.

I recently got to try a meal of Texas style BBQ brisket. I am a huge BBQ enthusiast but that Texas style brisket was knocked “out of the park”!

I ate it of course after ripping it apart with my bare hands. I then asked for a whisky, and they were like Waaaa? They gave me Grappo. Have you guys tried this shit? Horrible stuff.

I have to admit, the slaw did add a certain crunch that went well with the dog. The long line and chaos in the Varsity turned me off.

Funny culture shock story. When stationed in Frankfurt, Germany I learned that Pom Frittes (French Fries) are served with Mayonnaise alongside instead of ketchup. — When I turned my nose up at the idea, the German Gal I was with asked me, “What do you make potato salad with? Do you use Ketchup? No you wouldn’t.”

I never forgot her words. She’s right!

Of course…. Ketchup on a Hot Dog is the Truth!
