I've both had and made venison chili and it was delicious. One of the best bowls of chili I've had was in New Orleans and was made with turtle! That was wickedly good! Mostly I cook turkey chili, no beans, just diced meat, onions, and spices. On occasion I'll make either beef, chicken, or pork chili. Sometimes green chili, sometimes red. Sometimes it's relatively mild and other times (depending on who's coming over) it's spicy! If I want beans, they're cooked on the side and added to the chili.

I just made chili last night. One Pablano, two jalapenos, and one serrano pepper. Two fat cloves of garlic. Heaping tablespoon ground cumin with dashes of hot paprika and mexican oregano. Can of diced tomatoes with green chilis, can of black beans, can of dark red kidney beans. Shots of chipotle and louisiana hot sauce with a teaspoon of salt and honey. Low heat to rolling boil.....Excellent !! Keep this recipe a secret guys !!
Rosemary is only good for cranking out Satan's babies and has no place in chili.

Is vegetarian chili really chili? Isn't that kind of a consolation prize?

Maybe vegetarian chili, or worse, vegan chili, is a hipster version.
In Oakland there is a terrific pizza joint called Zachary's, and right across the street, someone recently opened a "healthy pizza" place. Zachary's is always bustling. People are happily stuffing themselves on delicious death on a plate. Across the street, the healthy pizza eaters look miserable and spend most of their time staring longingly at Zachary's.
Is hipster pizza, as in "healthy" pizza, authentic?

 
Now, I've been really digging some hip artisan pizza lately. I built a wood fire oven in the back yard, and we've been groovin some phat pies that are actually thin criust artichoke and kale pizzas. Crispy. We get really good winter greens and artichokes grown in rabbit and goat waste... They also get a lot of obscure jazz played to them in the evenings, very hip greens. Also, the fire in the oven is stoked with fruit trees that I've pruned last fall.
I be damned. I may be an old hipster. Is that ironic?

I didn't even think about it. I know, Chili con Carne is the way to go. ('Murrica!) It took me years to make it taste good where the missing meat didn't matter. You seriously can't tell the difference and it's closer to stew for sure. (I haven't always had a fridge) I'm TRYING to eat healthy. I could have used the slabs of bacon in the fridge...hmmm. Maybe next time. :P Best chili I ever made was high heat sauteing big chunks of steak in honey, then adding fresh cut hot chili peppers in an well seasoned iron skillet. Throw in cumin, cilantro and some fresh tomato slices. Top with jack cheese, sour cream and green onion. In the past I've used chicken, lamb, pork, all cuts of beef, sausage and even mushrooms. I am not a vegan or vegetarian, just a creative cook always trying new variations.

For authentic pizza, all you really need are basil leaves, mozzarella for toppings and a good red sauce(with fennel)on a decent crust. Preferably a brick oven or baking stone to get the job done right. That said, I like putting EVERYTHING on pizza. Hipster food should be outlawed. Everything should have gluten and nuts in it to kill off the weaker hipsters. Tofu and bean sprouts should be radioactive so we can track their movements.
Now I am hungry.

I know, it's terrible. I'm trying to get rid of "the twins" I've been packing around in my belly. Been eating rabbit food for two days. Tomorrow is bacon day !!

Same here...... I don't think I've ever made chili the same way twice. I use what I have on hand, and what's in the garden. Sometimes its great, sometimes just OK....... :?

I've got that same "twin" problem too...... LOL!

I've been fixing to build an outdoor brick oven for some time now....... If nothing else, this hipster thread may just inspire me to get off my arse and get it done..... :D

I actually based my earlier "authentic" chili comment on what I learned from an old retired chuck wagon cook back in the 60s. Both he and his father were chuck wagon cooks in West Texas and New Mexico. He was born in the late 1890s. He told me that "pure" chile was made from cubed beef and contained freshly ground chili pods, fresh spanish onions, garlic, cumin, salt and pepper and beef-suet or lard or bacon grease. It was slow cooked in a cast iron Dutch Oven over a campfire or in a fireplace until the meat fell apart when stirred. They served it over cornbread or cornmeal pancakes and it was thick enough to eat with a fork. He told me that if they had a big crowd to feed, they would cook some dry red beans and add the meat to it. That they would eat out of metal coffee cups.
There are many different ways to make chili nowadays. However, I refuse to call anything that contains turkey or white beans chili.
I have had venison chili and will not argue against it. It's good too.

Speaking of diets, I lost 40 pounds between January and now (280-240, my ideas of a "good diet" last year were obviously way off the mark) and I'm on track for a healthy 200 this summer (trying to put on muscle too).

Two eggs on toast plus a bowl of cerial for breakfast, and then just vegitables and dried cottage cheese for supper (boiled vegitables, but the broccoli just goes in for a few minutes), with greek yogurt and fruit for dessert. No lunch. It sounds like I'm eating like a girl but my veggie plate weighs a couple of pounds. A few carrots, an onion, half a head of broccoli, a potato, it adds up. Dried cottage cheese is basically flavourless protine clumps and greek yogurt gets you more protine per $ than regular, and with much less sugar (even if it is flavoured).

I also found this "Textured Vegitable Protine" stuff that I put on my cerial in the morning, it's 50% protine and only cost $0.50 per 100 grams, insanely cheap for protine (I'm avoiding Tuna for now), I just hope it's not some byproduct coming out of China.
I'm not terribly active in the day, mostly driving (if that), so I need to go out of my way to get exercise.

I've pretty much hit the salad trail for the time being as my blood pressure requires it. And salt is a stranger. But I don't skip meals as that slows down one's metabolism, which is counter productive. Cottage cheese...I hate cottage cheese. Cottage cheese or death...cottage cheese or death...that's hard one.

That's classic Texas chili. But it also includes oregano that grows wild.
However, I refuse to call anything that contains turkey or white beans chili.
Then you're missing out on some damned good chili. Properly done, bird chili is delicious and I've had a number of Lone Star chili heads ask for the recipe.

Jon: Are you suggesting banning complaining, judging, questioning, etc? That all behavior should be acceptable? Anarchy? That the overweight should be permitted to wear Lycra in public? Black socks with Bermudas? Paisley and plaid?
