There were a LOT of great duo and ensemble interactions in Pulp Fiction. Harvey Keitel, Steve Buscemi, Amanda Plummer, Tim Roth, Ving Rhames.....
Oh and Baby Ruth in Caddyshack was my favorite.

I would say all of Casablanca for the memorable quotes. I love Bogart and Bergman.
Here's looking at you, kid.

Louis, I think this is the beginning of a beautiful friendship.

Play it, Sam. Play 'As Time Goes By.'

Of all the gin joints in all the towns in all the world, she walks into mine.

Round up the usual suspects.

We'll always have Paris.
For something a little closer to today I will have to go with;
Haley and Bruce in The Sixth Sense - I see dead people.

Schwarzenegger with everyone in the Terminator - I'll be back.

or

Tom and Anthony in Top Gun - I feel the need - the need for speed!

Al Pacino and Jack Lemmon in Glengarry Glen Ross. Actually most of the interactions in that movie are memorable

RAIDERS OF THE LOST ARK
Sallah: Indy, why does the floor move?

Indiana: Give me your torch.

[Indy takes the torch and drops it in]

Indiana: Snakes. Why'd it have to be snakes?

Sallah: Asps... very dangerous. You go first.

Let's take it old school, guys.
How about Humphrey Bogart and John Ridgely in "The Big Sleep"?
Eddie Mars: Convenient, the door being open when you didn't have a key, eh?
Philip Marlowe: Yeah, wasn't it. By the way, how'd you happen to have one?
Eddie Mars: Is that any of your business?
Philip Marlowe: I could make it my business.
Eddie Mars: I could make your business mine.
Philip Marlowe: Oh, you wouldn't like it. The pay's too small.
Classic, hard boiled, tough guy talk from one of the best private eye movies ever made.
