Anthony, the way you describe cornbread makes it sound delish. I'll have to do a little digging to see if I can find a local supplier though I shan't hold my breath.

Cosmic, you should have specified 'self rising' corn meal for your recipe.
I've made some in my day, and tried variations. Plain with a little sugar is my preference, made with melted lard or butter or bacon grease, and in my 8" cast iron skillet that has been pre-heated and greased to help the crust on the bottom.

I use pure corn meal mixed with flour and then add baking powder and salt.
I make 'oldfashioned' oatmeal almost everyday. When I don't I make Cream of Wheat or another hot cereal. It's a religion with me.
Sometimes I add corn meal, just enough, to pancakes.

Cornmeal mix, sorry. We just use this for almost everything. BTW, yellow corn meal is more corny tasting with less sweetness, and white cornmeal is more naturally sweet. Maybe this is why the Northerners use sugar if they are using the yellow. I just find the white cornmeal to be all around better tasting. We make one pone every other day for dinners. well seasoned Pintos with a hunk of pork in the pot and cornbread is the quintessential Southern meal.

I make a panful and eat about a third while it's hot. The rest I save and toast and butter another time.

I've made some with chocolate chips, some with cinnamon, some with peanut butter powder, some with oatmeal, and I may be missing a few, but the basic corn meal recipe is always best.

I've lived in the south now for many years and I know of the magical combination cornbread makes with beans and greens that are pork hock seasoned.

I do seem to prefer the yellow, but I grew up with it.

After searching around town this is the only Cornbread mix I can find. I didn't think a trip across the border would be necessary but it seemed that was the case. GLUTEN FREE 8O

I am not in charge of anyone's diet, and I appreciate the spirit of fun in this thread.
However high sugar cereals made from white floor not only have very little nutritional value but instead are loaded with white sugar, one of the most damaging substances in any diet. You can't call these cereals food; at best they are clutter and actually deplete rather than add to one's strength. And they are expensive.
When I walk into a grocery store I do so with disdain as 50% of what's on the shelf is dominated by sugar, white flour and fat. Cheap to manufacture and sold at high cost. The American way is to make a product that can be sold for 5 times the cost of manufacture by advertising, a euphemism for lies and market manipulation. Budweiser is swill but halfway through 2018 Anheuser-Busch InBev’s global revenues were 14 billion.
I took at the major stockholders of General Mills. Of course, it's all about the money:
Blackrock Inc. 44.8 million shares valued at 2.7 trillion dollars. Asset management to the tune of 6.3 trillion dollars.

The Vanguard Group 40.5 million shares valued at 2.4 trillion dollars, asset management to the tune of 5.1 trillion dollars.

State Street Corporation 34 million shares valued at 2 trillion dollars. Financial services and bank holding company managing 2.8 trillion dollars.
The next time you're crunching on Captain Crunch think about the staggering economic power that steered that bilge into your mouth past the common sense that would abjure such injurious "food."
