    I would try the noses of caribou and perhaps even the tail of a beaver. Gizzards on the other hand are a well-respected part of classic French cuisine. "Salade au gesiers" is a staple, and very tasty too.

    "Ingredients for a ninety pound bag consisted of one buffalo to sixteen pounds of said berries". Assuming we're using a cow and the meat makes up about half her body weight, you'd have to reduce about 500 pounds of meat to a mere 74 pounds. Is that possible?

    I'd like to add A.&C. Petersen's "Caledonian Highland Cream" to the list of suggestions. Very good base blend, casing not too sweet and a highly agreeable room note, if my wife's word is anything to go by.
