    A favorite of mine is known as "Joe's eggs" or a "Joe's special". Ground beef, onions, spinach and Romano/Parmesan cheese. Supposedly originating in San Francisco where pretty much every restaurant claims to have thought of it first. Needs a good, crusty sourdough to go with it.
