Perhaps luck, low sulphur content, or a little of both.
I don't clean my vulcanite stems with hot water and I don't clean my acrylic stems with alcohol. The water flush works great. So do other methods. Whatever works for you.

All my pipes' bowls look like this after cleaning them ('cept for cobs, which are a pain to clean and one of the reasons I'm not a fan of them):
Also, I don't build any cake (gross), so I don't really have a problem with pipes going sour and thus have little need for the water cleaning method.
Still, I'm not dissing the water thing. Over time, tars build up in the draught hole lumen, where my finger and paper towel cannot reach. I do run shank brushes as part of my regular cleaning, but once or twice a year, I might do the running water cleaning on the stummels.
Also, I always take the pipes apart, so I don't have a problem with vulcanite stems being oxidised by the water, or bent out of shape if it's too hot.
Well, I might end up having a bit of a problem, actually, as I always wash the stems in the sink with soap and water. I use cold water for the vulcanite ones, but I guess over time they'll turn green. One reason I avoid vulcanite and prefer acrylic.

Cobs don’t have stems that oxidize...?
The question here is, does hot water oxidize stems or cause them to reveal the oxidation?
I just didn't use as much water or as much time under the water. The cob came out very clean and fresh
I was afraid that cobs may get soggy after running some water through them.
They probably will if you keep them under water too long. I think I used the water for maybe 5 or so seconds a few times
I use water flush sometimes, but not after every bowl. Funny how whenever this method is rediscovered there's a flurry of posts.
The older ones do and that water based glue can loosen underwater.
I cleaned an office coffee pot once (running water) and caught hell for altering the flavor, I banished their Coffee ghosts.
