Almost forgot this one from last Saturday. NY Strip Wagyu with a garlic mushroom sauce.

Anyway, I am not as huge a fan of Wagyu as I used to be as I am not a fan of the taste bred into the fat layer. That said, I hope any who enjoy it do so.
Personally, I enjoy a good local cow, fed on grass and aged properly. I am a bit of a beef luddite as I love simple beef raising and simple salt, pepper, garlic seasoning on cast iron.
Most think mine is a lower quality...I cant enjoy the other end of things. No worries either way.
Glad you enjoy the finer beef Kevin, I'm one of those who loves the simpler...both of us are right if I have my say.

Fricken love heavy cream sauces! Just did one myself for the first time about a week ago with some scallops and shrimp. Used lots of fresh herbs and plenty of crushed red pepper. It was fantastic.
