Buying an infrared grill was one of the best investments I’ve ever made in upping my steak/burger game. Not bad for other things, either.

I recently added a rotisserie to it and did an entire plucked duck from back during duck season, spinning over a tray of potatoes to cook in the duck fat. That wasn’t a terrible benefit of the upgraded grill, either; although it came with its own specific set of challenges...

A couple of the guys I hunt with swear that wild ducks aren’t worth eating. I try to tell them that they aren’t cooking them the right way, but I’m always met with, “That’s what everyone says, but I’ve tried it any way it can be cooked and they always suck.”

It’s all I can do to keep from smiling as they hand me THEIR hog fat mallards after our successful hunt.

My brother in law gives me all of his ducks too. I'm not going to talk him into cooking them a different way. I'll just take the ducks.
He also hates cleaning fish, so he is one of the very few people I will go fishing with also. Double the score!!

I don't know if it's good or bad that I read this thread, as when I do major craving starts:). How else am I to process reports from reputable consumers that last night's feed was the best they have had?

I LOVE duck!

I also find it funny when people do this as well with other wild game. IMO, there is no such thing as gamey tasting meat. It's all about the way it was treated in the field and then prepared at home. Some people just don't know how to cook wild game. It's totally different from store bought meat.

Every type of meat taste what it tastes like. I also laugh when people ask me what something taste like. The conversation typically goes something like this:

Them: What does deer meat taste like?
Me: Deer.
Them: Yeah, but what does it taste like?
Me: Deer.
Them: But what would you compare it to? Beef?
Me: I don't compare it. It tastes like deer and beef taste like cow.
Them: Well what does squirrel taste like?
Me: Squirrel.
Them: I heard it tastes like chicken.
Me: No, it tastes like squirrel. If you want chicken, eat chicken.

Exactly. I've had game cooked by other folks, obviously, and you can almost tell immediately when someone knows what they're doing in the field by the quality of the dish. You can absolutely taste incompetence.

The problem is that it's such a 'macho' lifestyle, that hardly anyone is willing to just swallow his/her pride and ask for help/instruction.
