I look at everything I've done for what it is. Did I accomplish what I set out to? If the answer is "yes", then I feel good about it. With the War Horse blends, we were going for an unabashedly strong blend, and I smoked it before applying the topping. It had a room note like a truckload of manure laid on top of burning tires. The flavor was earthy and peppery. Is the flavoring over the top? Yes, but I felt it had to be.Hmmmm....I have had the pleasure of smoking several of Russ's blends and would find it hard to say that War Horse Green or Red was the pinnacle of his blending repertoire......surely even he sees that the topping is over the top?
It sounds revolting but I still want to try it. I know, it's pervertedI think the consensus here is that people like WH Bar despite us as a company telling them not to like it!
