I love a good smooth and personally don't mind the odd small fill. I won't turn up my nose at a nicely done rustication or subtle blast even though they aren't my favorite. Stain or grain aren't huge concerns for me but a good birdseye or flame in a light or natural stain are quite nice to look at.
