That mop sauce sounds great for pork steaks! I saved it but I'll have to modify it a tad. Wife and daughter has some food allergies. I can eat anything though😉.
The mop sauce is fantastic on pork steaks and shoulders/butt. The flavor soaks through the meat and my daughter loves it.

Was actually going to do pork steaks with mop sauce today, but called an audible and decided on a Mississippi pork roast instead.

Pork steaks are turning out to be one of my favorites! I was never a pork eater. One day my friend asked me if I ever got a whole hog. I told him no, don't eat much pork. He said, it's not the same as you get at Kroger! He raved about how delicious good pork was so I purchased a whole hog at a local farmer/butcher. He was so right. I think this is my fourth hog. They will smoke the bacon,ham and hocks but don't cure anything which is fine with me.

I went with 1/4 cup pure maple syrup,Tbsp. cider vinegar, Tbsp. mustard. Two inch thick steak. Turned out great,family really liked the glaze. Poured the leftover sauce over the meat!

That's a beautiful looking ham steak with nice hatch marks.

I just pulled the Mississippi pork roast after a 3 hour smoke and additional3 hour braise. Will be assembling sandwiches with the pork, pepperonchinis, and braised garlic later.
