I always thought the clays sold with colored tips were done up with a lacquer, the same type that would be used on clay figurines. I also thought that’s what they did in the past but I’m just thinking and guessing.

That’s very likely possible, they would have to fire the glaze on after the two pieces of the pipe were put together I would imagine, I think coating the stem is a rather recent phenomenon though and wasn’t done during the heyday of clay pipe smoking, judging by the wear it did to people’s teeth at least.
