Moment of truth. For behold, my homegrown has spent a week in the noodle press and is now a puck. Saw a bit of white when I cut into it, probably at about the places I'd put un-cased Rustica.
Stared at it, poked it, stared at it some more, licked it. Tasted kinda sweet.
So I'm assuming it's sugar from the too-much-casing that went on some of the Samsun, but if my throat bothers me later this brick is being consigned to a sacrificial fire. Or thrown out into the woods.
