I played Hardcourt Bike Polo for about 8 years. From it's infancy as a social thing through it's evolution into a competitive, international sporty-sport.
Never participated in it but cheese rolling almost certainly qualifies as an "unusual sport".

I played hurling for a bit. Fun game. Got my head split open pretty bad getting hit with the camán trying to get the sliotar. Never wore a helmet as a kid lol.
No, but I always thought having a go at real tennis or jai ala could be fun.

Street hockey on bikes. Went well until a stick went through the spokes.

Another vote for bike polo. Learned to play in the mid 80’s at a fat tire festival in Moab and continued to play whenever I could interest others to give it a try. Great fun. More recent, it would be hide drag at the local rodeo.
Lawn bowling, court tennis and rugby are three sports I've done, though the latter only as a teenager (in an English public school.) Not unusual for Brits, but not many Yankees have had the opportunity to play those.
I haven't participated in any weird sports, but I have heard of one not yet mentioned... Jogging (even the name sounds goofy):
