I recently picked up an 8oz tub of Union Square from May 2016, and I’m itching to crack it open. Any good reason to wait?
This is likely the plan. I’ve had Union Square fresh, and it was ok. I jarred it for almost 2 years and it showed significant improvement.My strategy - wanna try it? Open it - keep out 2oz,, jar/Mylar the rest! Personally I would Mylar it in 8 x 2oz - then crack it open anytime to like to try it……

Time Warp.I suspect that you're good to go now. I have a pound of it from 2005 that I'll have to get around to cracking open to see what has transpired. No rush though...
