Did I mention I make chocolate for a living?

Really? We had a chocolatier come into our bakery once and I was really interested at all the chemistry behind chocolate. I had a difficult time hand tempering white chocolate, that stuff is tricky.

If you want to send Dan (Woodsroad) a bribe, I hear he is partial to Captain Black Grape.

Yes indeed! We make chocolate from scratch. The science behind it is one of my favorite parts. White chocolate can deffo be testy, there is a lot of stuff in there besides the cocoa butter; which is the important thing for tempering, milk, sugar etc so it gets difficult to temper for sure. We don’t make the stuff cause we can’t press the butter ourselves at the moment but maybe one day we’ll start pumping out a single origin white chocolate.

Are you a baker yourself? Do you specialize in anything in particular?

Get me a location and I’ll send all that grape where ever it needs to go
