The Christmas Eve roast beast turned out muy excelente! (And insane that a whole rack is roughly $20!)

Injected with bone broth, overnight dry-brine, seasoned, 5 and a half hour smoke, 2 hour rest:

My man, I have not seen or had a pork roast in many years. Nice work and it made me nostalgic.

See, holidays aren't as big for me these days and I get kinda down. Aside from trying to make holidays special for my daughter, my family is small and far (my sister across the state and my mom down in Florida with extended familythat is also small and far away).

But I have great memories of a pork crown roast (where it is roasted with bones in the air and spun in a circle so it looks like a crown) with an amazing chili sauce glaze. Then playing cards with the family until it was time to wrap up.

Thank you for the memories and making me smile. I'm going to see if my mom remembers that glaze recipe.

Last night I cold smoked mozzarella from Costco for about 3 hours. I made it for a party tonight but my wife tried it this morning and immediately said it would make the best Caprese salad ever. Now I have to stop on my way home from work for the remaining salad ingredients.

A good friend if mine smoked some cheddar that he marinated in merlot for a few days. He lives in the next state over but it looked damn good. He said it turned out great.

Part of New Year's Eve dinner. Prepared by my mother-in-law and my wife. I'm just the dishwasher; I'm good for nothing else. Oven-roasted lamb shoulders, drizzled with Spanish brandy, potatoes, carrots, onion. There are only two here, cut in half. We were originally going to roast four shoulders, but we thought that would be too much food. Since there were baked scallops and northern gulas.PHOTO-2025-12-31-18-25-14.jpg
