So far I'm finding I lean towards blends of some sort rather than straight (or as straight as they can be) tobaccos.

Kind of like how I tend towards VaPers rather than straight VAs. Although casings, toppings, etc really make that an unqualified statement.

But that's why we have blends, right? (And toppings, casings, etc.) Once I get my hands on some of Watch City's stuff I should (hopefully) have a good idea of what I'm doing.

Simply Red is a reasonable replacement for 5100. But after I got some Rhythm & Blues (Simply Red plus stoved Virginias) and Rouxgaroux (VaPer version with Simply Red as the base), the Simply Red took a back seat. If you hit me up the middle of April when I return home from FL, I'll be happy to send you some samples.

Same here. I have a bunch of Simply Red and was all jazzed about it initially but haven't touched the stuff since discovering Rhythm & Blues.

I picked up a pound when it first came out. The vinegar my bag had was so strong that after the box sat on my kitchen table for a few hours, you could still smell it for a few days afterwards.
I recently bought a pound of their red Virginia and my experience was the same as yours. The unmistakable smell of vinegar was so strong I could hardly smoke it. Fingers crossed that a few months in the jar will smooth it out somewhat.

I had jarred most of the bag of 515 -RC 1 received on the initial release in April 2018. I am transferring some things from Mason jars to Mylar, but this wasn’t on the list. In the interests of science, I decided to open it. Verdict: the smell of fermented Virginia tobacco, not overwhelming, and to me (having been in a tobacco barn in North Carolina where tobacco was stored and going through a summer sweat) and distinct from any variety of vinegar I know of. (I have both apple cider vinegar and white distilled vinegar in my house and use both for various purposes.) Similar, yes, identical, not close.

I have other jars of 515 RC 1 and 507 S that I have acquired since April 2018, and have smoked a good bit of both. I tried some of Ernies concoctions like Simply Red and concluded that Ernie, though I love him to death, is a genius with Burleys. The additional casing he adds only increases the heat and bite. IMO, YMMV

A blend of 50/50 515 RC 1 and 507 S is excellent, almost as good as the same proportions of McClelland 5100/5105.

I get the vinegar in the 515 -RC, but thats a good thing for me. I have not smoked it much, but I purchased a bit post-Mcclelland and smoked a few bowls just to confirm it was at least similar to 5100. I have not reached for it since, but I quite like it and it is going to work when I get a 5100 craving.
