I got a Victorinox EvoGrip 18 Swiss Army knife for Christmas and it is great for cutting plug and twist tobacco. The reamer blade, while not intended as a pipe reamer does the job nicely on my small cobs that my senior reamer won't fit in.

Bought this Lag couple years ago, you've got to be careful it's real sharp. Got a Shiefield on the bay for 19.95$ and really does just as good of a job.

I don't build cake, but scoop out the bowl each smoke and then wipe it out with a piece of paper napkin or towel, keeping a thin layer of carbon that never requires reaming. I wouldn't let a knife blade near a pipe bowl. I do have a good small collection of pocket knives, but for other purposes. My pipes appreciate this and live for decades. For pipe tools, I'm a major user of pipe nails or horseshoe nails, with a tamper on one end and a scoop on the other. Such simplicity, I think it is one of those unheralded miracles of design; it does the job well, costs next to nothing, and if you consider that -- it's quite beautiful in its own right.

A dedicated pipe tool that has a blade, rounded "point", tamper, and long narrow pick. Lightest weight for the set of useful items. I never use a pocket knife unless that's all I have, then I stay away from the bottom of the chamber. I do what mso does for cleaning the chamber when I have water and towel handy.

I rarely leave the house without my Case Trapper. When I'm home it's in my "pipe stuff" basket along with pipe cleaners, tampers and matches. The round blade makes a great reamer, you just have to be careful not to gouge the briar.

The French makers still turn out pocket knives with good carbon steel. It weathers but it takes an edge. Many other knife makers have caved to customer preference for bright shiny stainless steel, serviceable but will never sharpen like carbon steel.

I second carbon steel. By a few Opinels (sizes 7 and 8) grind one of the 7s into a round, oval blunt point and you have a great reaming tool. They keep an edge and are easy to sharpen. Not bad for 12 to 15 dollars.

This is what I usually carry. Not specifically a pipe knife (a doctor's knife), but the pill blade comes in handy. Most of my pipes have fairly large bowls.

Here's my French made Laguiole (pronounced La-yole) pipe knife with juniper scales, integral tamper on bottom and inlaid cross. Legend has it shepherds would stick the knife blade in the ground, cross right side up, and pray to the cross.
