I just use my pocket knife, a 3” Buck 112 Ranger Sport.
I use my great grandpappy's old knife. Over 100 years old.

I have no pictures of the various kitchen knives and pocket knives I cut "snakes" and "cakes" with. Just whatever is sharp and at hand when needed. I even used a pair of tin snips once. Very unsatisfactory it was.
The only pipe knives I use are the Richard Sheffield pipe knives. I don't smoke plug or rope, so no need for cutting. But I like having the sharp blade on the RS knife, for taking back cake when needed.

I should have clarified my reason for wanting a specific “tobacco knife” . I have plenty of pocket knives that I carry daily that are used for a number of different tasks. Some contain left over residue of said job. So having a specific tobacco knife is not only necessary but also just fun.

Can anyone recommend a small (less than 4"/100mm) round-bladed knife for cutting ropes and plugs? Let's say less than $100USD. I'm not trying to become a hand-made knife collector. I remember from the fair trade tobacco forums that Kuhn-Rikon made one that was well liked for dressing whole...

My buddy’s a bladesmith, who smokes pipes. I wrangled a deal with him to do his take on forging me a 1095 Japanese nakiri for chopping tobak. I gave him the basic blade dimensions I wanted and he did the rest.

Love a nakiri. Have one for kitchen use. I love the handle profile.
I take the easy way-out ant let @georged do the chopping for me.

Ulu knife. Ugly but super easy to cut plugs, ropes and flakes!
