I only eat a NY Strip rare with sautéed onions, baked potato and grilled Asparagus. The marbling has to be right and there has to be a thick piece of fat along one side of the steak.
I get mine from Sam's Club. About 1/2-2/3"? Medium rare with just kosher salt, fresh ground pepper and garlic powder for rub. On charcoal grill, takes about 5 min on each side. Oh! Always prefer Guinness with steaks.
