Fictionally I'd either say Holmes or Gandlaf, real people though I'd probably say either Samuel Clemens aka Mark Twain or Albert Einstein. Bing Crosby is well noted for his pipe smoking as well.

Bing Crosby is probobly the most well known. C.S. Lewis is the coolest. I wish I could have been in the room while he and Tolkien smoked together.
