I just completed a sample run using two smaller mason jars sealed. Everything seemed to work great with the sous vide technique. I ran it at 192 for 2 1/2 hours. You can tell from the color that the effect took place as desired. I’m looking forward to letting them sit for two weeks and then comparing against unstoved. Only a slight bulge was noticed on the lids and it corrected to a vacuum within 10 mins after leaving the water.
