My wife and I -- we're Disney Vacation Club members -- just came back from a week at WDW. It was our fifth visit as a couple, and we absolutely love the place.
One thing I'll mention is that there are numerous designated smoking areas in the parks -- and, for the most part, they're well-shaded, with lots of seating. But smoking in any other locations -- including on any Disney transportation (which includes open-air boats) -- is not allowed.
Chances are, though, you really won't want to take the time to smoke a pipe in the parks themselves, since that means you'd be forced to stay in one place for 30-60 minutes. And when you're paying what it costs to visit WDW, it's not really an efficient use of your time. Unless the rest of your family wants to take off and do something you're not interested in while you enjoy a pipe. (But then you'd be missing the pleasure of seeing your kids enjoying the parks.)
Also, not that you asked: If you're planning to eat anything other than fast/casual food in the parks, you should make dinner reservations NOW. Use the "My Disney Experience" app (available on all mobile platforms) to book restaurants, FastPass+, and get wait times for all the attractions. It's a fantastic app that we used constantly -- as did most other people we saw while we were there.
