I don't know anything about that machine but it doesn't have a whistle. Why would anyone buy an espresso machine without a whistle? You'll never know when you espresso is ready. Ya gotta have a whistle...and a pop up flag if you are hoity-toity enough to afford the extravagance.

At the steam pressures these machines build up to, you could probably get a decent train horn to work. Imagine if you can: You get your coffee going and head to the "head" to pee. Your coffee machine blows it's train horn. I hope you're sitting down to take that pee or your wife is gonna be PISSED (pun intended)!!!! puffy
 
What irritates me most is that the majority of hand operated mechanical commercial expresso machines, regardless of the brand comes with pressurized portafilters( no need for grinders anymore ,
Pressurized portafilters suck. There is no way to pull a superior shot with a pressurized portafilter.

The grind is one (of 4 things) of the major factors to pulling a perfect shot.

The Flair arrived yesterday and after looking at it yesterday, I decided it was too much of a hassle to use it for my afternoon coffee. Just had my first this morning, and it was pretty good! Liked it better than the stuff I'd been making in the moka pot anyway. I think I see what @sandollars was saying about the coffee going cold for doubles... I thought I preheated everything well enough, but there must have been a lot of heat lost through the brewing process, as it did not take long at all for the finished coffee to become rather cool. It absolutely would have been cold had I done a second. The Neo does have the pressurized portafilter, but that might be what I need since I just have that Hario manual grinder. I'll eventually try a regular portafilter, and possibly upgrade my grinder in the future. Or not. We'll see.

Thanks for the roaster suggestions. I'm going to take a ride up to Red Bay in Oakland sometime in the next week or so. Today, I used Peets Espresso Forte, which I like and I have some Lavazza Gran Espresso on the way. I know I need to be very careful about not ordering too much coffee than I can reasonable drink before it loses too much flavor. I want to try it all, though!

Nice! Glad you pulled the trigger! It's definitely nice to be able to pull a great shot of espresso!

Congrats on that machine! Now the experimenting with different roasts, grind sizes and doses can begin! If you like Italian espresso roasts I can recommend the roaster Agust, though I have no idea, if their beans are availabe in the US. And, as you had already mentioned, try to go through one bag rather quick before opening the next one and keep the beans in an airtight, dark container. Otherwise the beans will loose taste and you will have less crema.

I'm looking hard at the Profitec Pro 500 PID with flow control, but the price is holding me back right now.

Ever though about a "Decent Espresso" [yes that's the brand name] machine? One can argue about the design, but in regards of flow control, this is said to be state of the art for lower price than conventinal machines with flow control.

What do you mean by flow control? Is it more than having the right grind, right packing, right pressure at the brew head, and right time of forcing the water (at correct temp, of course) through the puck?

I have another interest in flow control of a very different sort, due to prostate cancer, but that goes waaaaaay off topic, no?

Definitely not that kind of flow control and glad to hear the prostate issue has been taken care of.

This whole coffee thing really is an endless subject of interest, isn't it? Now I am getting kind of curious about home roasting. Literally, all this started for me like 2 months ago when I started making French press coffee in the afternoons, then broke my press, and started buying espressos, and bought a cheap moka pot... I keep thinking, "I'm not that picky, there's no need to get too crazy," yet I find myself drawn towards more and more detailed explorations...
