At the steam pressures these machines build up to, you could probably get a decent train horn to work. Imagine if you can: You get your coffee going and head to the "head" to pee. Your coffee machine blows it's train horn. I hope you're sitting down to take that pee or your wife is gonna be PISSED (pun intended)!!!!I don't know anything about that machine but it doesn't have a whistle. Why would anyone buy an espresso machine without a whistle? You'll never know when you espresso is ready. Ya gotta have a whistle...and a pop up flag if you are hoity-toity enough to afford the extravagance.

The grind is one (of 4 things) of the major factors to pulling a perfect shot.

That's what I have without the flow control, didn't feel I really needed it. Great engineering and a great machine.I'm looking hard at the Profitec Pro 500 PID with flow control, but the price is holding me back right now.

It's definitely nice to be able to pull a great shot of espresso!The Flair arrived yesterday and after looking at it yesterday, I decided it was too much of a hassle to use it for my afternoon coffee. Just had my first this morning, and it was pretty good! Liked it better than the stuff I'd been making in the moka pot anyway. I think I see what @sandollars was saying about the coffee going cold for doubles... I thought I preheated everything well enough, but there must have been a lot of heat lost through the brewing process, as it did not take long at all for the finished coffee to become rather cool. It absolutely would have been cold had I done a second. The Neo does have the pressurized portafilter, but that might be what I need since I just have that Hario manual grinder. I'll eventually try a regular portafilter, and possibly upgrade my grinder in the future. Or not. We'll see.
Thanks for the roaster suggestions. I'm going to take a ride up to Red Bay in Oakland sometime in the next week or so. Today, I used Peets Espresso Forte, which I like and I have some Lavazza Gran Espresso on the way. I know I need to be very careful about not ordering too much coffee than I can reasonable drink before it loses too much flavor. I want to try it all, though!

What do you mean by flow control? Is it more than having the right grind, right packing, right pressure at the brew head, and right time of forcing the water (at correct temp, of course) through the puck?
I have another interest in flow control of a very different sort, due to prostate cancer, but that goes waaaaaay off topic, no?
