So far the last couple years my mother (the turkey cooker) has forsaken the whole turkey mess/drama for a.. less wasteful approach.
Everyone seems to enjoy it so we keep doing it.
Mom will buy like 5 lbs of the best quality deli turkey, sliced thin enough to be pliable, thick enough to not disintegrate.
That gets wrapped around the dressing "a-la cabbage rolls", and finished in the oven in a baking dish with gravy.
The leftovers may not be as versatile as carved turkey, but it's damn delicious.
