So far the last couple years my mother (the turkey cooker) has forsaken the whole turkey mess/drama for a.. less wasteful approach.
Everyone seems to enjoy it so we keep doing it.

Mom will buy like 5 lbs of the best quality deli turkey, sliced thin enough to be pliable, thick enough to not disintegrate.
That gets wrapped around the dressing "a-la cabbage rolls", and finished in the oven in a baking dish with gravy.

The leftovers may not be as versatile as carved turkey, but it's damn delicious.

My dad lived for Thanksgiving.
He was a fantastic chef, and his turkey was always irresistable. Long after he retired, I came home to help him with what would be his last Thanksgiving turkey. Mom and dad were in their early 80’s and dad was showing signs of dementia. Within a year, they’d sold the house and moved to a continuing care place. We worked together in the kitchen, and I asked him to write down the recipe as we went along:

This would have been around 25 years ago. Every year since then, I’ve pulled out the Turkey Files and kept Dad with me as we plan and prepare for his favorite holiday. Last night my cousin told me how when she was around 20 or so (48 years ago), after Thanksgiving desert, she and my dad snuck back into the kitchen and picked away at the turkey until they couldn’t move. Made me cry, I’ll gladly admit.

Multiple families living on the same property, and the extended family comes here for thanksgiving.

We do three turkeys. This year it's one 20 lb. smoked, a 17 lb. Wet brined and bagged, and a 14 lb. dry brined and butterflied.

Just doing our part to save turkeys from the landfill. :)
 
If this is really your first time, look up Alton Brown’s Turkey Recipe. It is basically foolproof and you will cook a great bird following that recipe. Probably too late to brine the turkey but everything else will work great.
It turned out wonderfully well : kind off.

The baking was close to perfect, 95% perfect, slightly uncooked in some places. I ate the breast / white meat part today, it was succulent and juicy.

However it did have very little meat taste to me … I tasted the herbs and spices mostly.

Overall good first experience

We have at least 3-4 turkeys each year. They are an easy and great meal when entertaining. I always have a turkey in the freezer, just in case. Like I have a ham, pork butts, and usually a brisket. If not for entertaining, sometimes I cook something like that up on a Sunday and we graze on it all work week. Turkey has never been 'rare' to me. It is always available. I find it interesting that it seems to be a fad trend this year to downplay turkey. Seems part of the general war on meat that society seems to be waging here in the US.

One year we DID forego turkey. I cooked a prime rib and had oyster gumbo. My side L O V E D it, my wife's side (particularly my father in law) was like WTF!? throughout the entire meal. ha ha!

I have been trying to remember if this happens every year... I'd imagine it does.
If it is ongoing, it has intensified GREATLY in recent years. Part of the series of processing plants mysteriously burning down and the largest processing company selling out to Brazil. Luckily, I raise a shit ton of poultry (relative to my family's consumption) and have friends that have cows and hogs. Biggest challenge is processing. I am hoping to learn to process hogs, but it's a 3-4 month wait to get a steer into one of the small, independent processing businesses.

When I saw the title of this thread I very mistakenly assumed it was about the PKK, but no, wanksgiving is inescapable and the US lacks decent communists :(

No need for foreigners to bitter about Thanksgiving.

Just have a meal and give thanks, we don't mind.

Hell, we've allowed the Canadians to carry out their pitiful imitation for years.

If you live in europe, cook a turkey and be thankful that America has kept you from having to learn chinese.
Pls don't take me too seriously, as the most powerful empire on the globe I hoped you lot could take a friendly ribbing ;)
