This was a great opportunity to open a cellared tin. 40th Anniversary is a shade darker, and it has that amazing McClelland aroma of vinegar and rich tobacco. Carolina Red Flake smells like fresh hay and grass, and the flakes are less dense and more fragile. I'll be waiting for Cringle Flake this Christmas.

Cringle Flake was great last year. I understand that the 2020 edition will be out later this month.

I skipped last years considering I had purchased CRF 2019 and some Sutliff Crumble Kake Red VA. I'll probably pick up 3 tins this year just for kicks. Granted, you can never have enough tobaccee!

you’re comparing a good tobacco to a bad one.
Sutliff red VA crumble cake blows CRF out of the water. Actually it blows it off this planet.

I never tried the crumble cake from Sutliff, but the Christmas flake version was great. I have a few in my cellar and will be sure to pick a few more up when it makes its return. As for Carolina Red Flake, I have to agree that it doesn't stand up to McClelland's Virginias. It would be nice to see more straight red Virginia flakes.

I’m wondering what the sugar content on the McLelland is. I never really found McCleeland’s VA’s to be sweet, they are more on the savory side.

On a pipesmagazine radio program, Mike McNeil mentioned that they typically used VA leaf with a natural sugar content of 20-23%. I think the Christmas Cheer releases and 40th were likely at the high end. This year’s CRF is 8% and last year’s was 10%.

Oh wow! That’s great to know, thank you! I was actually inquiring about that in another thread. 23% sugar! That’s crazy! No wonder why they ferment so well! I’m sure I heard that episode you’re talking about, I just forgot that they discussed the sugar content of their VA’s. I’m really looking forward to smoking some 40th Anni Flake in 2027! I’ve been craving a McClelland VA lately. I might just have to crack open some Brindle Flake soon.

Sugar isn’t the key factor in the fermentation of tobacco... Over the period of fermentation the sugars degrade. Enzymes present within the leaf and secreted by microorganisms are the primary driver. Changes to the chemical constituency and synthesis of new enzymes is the fermentation.

The whole chemical process of fermentation and aging of tobacco is quite a complex mechanism.

Whereas fermentation of simple sugars is what takes place in brewing...
