The Vulcanite Freehand stem from Missouri Meerschaum is great, but no different from any average stem in terms of draw.
Missouri Meerschaum plastic stems have the most open draw you will find on any pipe that isn't hand carved. Out of dozens of pipes I've never found anything remotely comparable.
Your next best bet is probably Briarworks Classic. Still more restricted than Missouri Meerschaum, but more open than most and their stems are very high quality.

If you're really so scared if tinkering, just find a pipe you like and pay someone else to do the work for you. Limiting yourself to the odd one or two pipes that may or may not be open enough sounds like a fast road to disappointment.
