I agree, but I just don't see management able to monitor a waitstaff's performance without hovering over, or questioning the patrons. That would get annoying. I'll agree that I don't like the tipping custom. But as I'm sitting here thinking, I wonder if the quality of service would decline in a no tipping environment? An Old Southern Hoosier Meal
I prefer sweetbreads over brains. No chance of bone shards in them, and I like the texture better. I haven't eaten brains in over 35 years, since moving away from the family farm.
