Thanks. Yes, it is starchy. The trick is: Save some of the pasta water, which has the starch from the pasta, and then sauté the pasta, pasta water, and sauce. Then, twist it into a food ring. It looks really cool, and fancy, and is super easy to do.

Usually this is done with veal, and it's one of my favorites at Gratzzi Italian Grille in downtown St. Pete. I used the recipe from Chef Dennis.

In case anyone didn't notice, the commenting feature for WordPress posts (stuff outside of the forums, like Kyle's reviews, Fred's column, and the radio show) had been broken since just before New Year's.
