Tonight, I made cabbage and onions with some H-E-B kielbasa, sauerkraut and mustard garnish. I gotta say, I grew up hating cabbage, but I get it now. Mom, bless her, used to just beat the hell out of it, cook it too long I guess or something. She is a pretty great cook with other things, maybe she hated making cabbage! Who knows. It was great tonight, wife’s idea as a matter of fact. She says “cabbage” and I ask “how high?”, go figure.

I tend to meal prep a few times a month and make between 12-18 portions that I freeze. Have some baked ziti from last month thawing and just pulled a rosemary loaf out of the oven. Haven't eaten yet today, so I'll probably jump the gun and make a bacon, egg, and cheese sandwich after work egg-in-a-basket style.IMG_8959.jpg

Also made a batch of these keto friendly. I call them keto quiche. It’s an egg ham and cheddar cheese and chives in these. I also did a batch adding a little bit of diced green pepper, onion, and tomato to make like little western omelette, handheld things.

The last about a week in the fridge, not that I make enough to last that long or you can freeze them for God only knows how long
