I worked through my lunch today, so I sat at my desk and had my leftovers from last night. I was quite surprised at how many people stopped to say how wonderful my lunch smelled. Being a person that enjoys cooking, I thought I might share a simple recipe.
Smoked Sausage in a Mint and Balsamic Reduction
Brown 1/4” sliced smoked sausage in a large skillet. Add a bell pepper and small/medium onion, julienned to skillet and cook until softened. Deglaze skillet with balsamic vinegar, add chopped mint. Then simmer until almost dry. As an option, add halved grapes after the onions and peppers are softened. This recipe also works well with sweet Italian sausage. I suggest a good crusty bread to mop up the balsamic reduction. No sense letting it go to waste!
