    Have you tried Pecorino Romano? It's a nice hard, sharp, salty cheese too. Pecorino Toscano is also very good, but it's not quite as sharp or salty. A good "nibbling" cheese :wink:

    +1 on lump charcoal. Most briquette style charcoal has coal dust in it as a binder. Also, a chimney is the ONLY way to start the fire. Damn simple and very effective. :wink:

    Okay, here's a few pictures from this job Fireweed in bloom about a month ago Last week, we had a few "weather" days because of heavy rains. Unfortunately, the camp is smoke-free, and there is no smoke shack. When the weather cleared for a bit, I loaded up one of my Petersons with some Jack...
