Of course there are pipes that we see and we fall in love with, despite the shape of the finish. But I am sure, there are some characteristics that you prefer. Adding all them up, your dream pipe comes into shape... What's yours?
Mine:
Bowl: Billiard, Pot or Brandy.

Finish: Smooth. Dark wood, but not painted black.

Shape: Straight.

Size: Over 150mm lenght (5,9 inches) Inner bowl 19 or 20 mm (0,7 inches)

Mouthpiece: Carved vulcanite, fishtail.

Weight: Under 30g (1,05oz)
I am surprised at how very few pipes fulfill these ideals outside Dunhill.
The mouthpiece is very important to me. I consider it to be 60% of the smoking, and it gets almost no attention. I get angry when I see very expensive pipes with a cheap and bad mouthpiece, and there are a lot of those!

All right, Ill play along:
Bowl Shape: Poker, Bulldog, or Billiard

Finish: Birdseye Grain, Smooth Finish, with a nice Red/Dark Brown Stain

Shape: Quarter to Half Bent

Size: 6 to 7 inches

Mouthpiece: Big Wide Vulcanite Saddle Bit

Weight: Something hefty. I am a big guy and like to feel a hefty pipe in my hand.

Bowl Shape: Egg

Finish: Sandblast (with smooth rim), red/brown or black stain

Stem: slightly bent (approx. 1/8)

Size: bowl approx a group 5

Stem: Vulcanite, no preference for saddle or taper

Airway: between 5/32 and 7/32

Weight: I honestly don't pay that much attention to weight (but I probably should). But a light pipe (in relation to its size) does usually get my attention.

Hear! Hear! I'll second that! Pipes have to be comfortable in mouth and hand to create a truly enjoyable experience.

  • ¼-bent sandblasted bulldog,

    19-22 mm bowl (.75" - .8"),

    fishtail bit, thin button.

Dreams change through the years, and I have gotten my dream pipe a few times, to my dismay or benefit. My holy grail is an Armellini bridge, and my latest desire is a half rusticated bulldog or Rhodesian.

Bowl shape: Acorn

Finish: Light brown sandblast with a nice ring grain

Shank extension: About a 15cm, four knots long bamboo extension with a 1-2mm black acrylic ring between it and the shank

Stem shape: Eighth-bent or so with an elongated curve throughout the entire stem

Mouthpiece: 5cm or so black acrylic with a fishtail bit

Size: 20-25cm or so I guess, size 4 bowl I think

Weight: Not sure how much bamboo weighs but if it could be under 50g that would be super
I've made sketches of this and similar pipes I've dreamt of having, heh.
edit: not quite the same as what I described (though very similar) but here's one dream pipe of mine:
