I've been buying raw cashew nuts for some while now for adding to my curries.

They come in large bags from Amazon and I stick them in a blender and jar up the results to be used as and when. Thing is, I'm not getting that lovely creamy cashew nut flavour from them and wondered if perhaps roasting them in the oven might just do the trick. I mean roasting them afore blending them.

Would that work? If so how long should I roast them for?

As cosmic said - if you're using cashews instead of cream or yogurt, they need to be roasted first.

You can toast the cashew powder - we do sometimes when we're out of roasted nuts - but it is very tricky to not burn it. Use the lowest possible setting on your stove and stir constantly. Pour it out of the pan when it's a nice light golden.

f you're using cashews instead of cream or yogurt, they need to be roasted first.
I use yoghurt and coconut (milk & desiccated) in my curries as well as the cashews. It's called a Cornish curry ;).
You guys use some different units of measurement for the heat in your ovens.
We do indeed, one is 'hot' and the other is 'hotter'.

Well, I have noticed that on British cooking shows, they use "gas marks," instead of temperatures. Maybe I am misunderstanding what they are saying, but it seems very different to me.

Most cookers here go one to ten. One being hot, five being really, really hot, and ten being really, really, really hot. But if you're one of the King's prefered subjects, you're allowed to own an oven that goes up to 11, which is super hot and is generally used for cooking game caught on the moors. These ovens haven't reached the colonies yet, so you guys can expect to get them in ten or twenty years time. Be warned though, the 11 dial is not suitable for cooking hot dogs or hamburgers.

Nut grinding is a laborious & messy business, and literally impossible to do properly without specialized equipment.

Since you already deal with Amazon, just do a search on "cashew butter". Comes in jars (think peanut butter), different shades (toast levels), and is effortless to use.

It's how restaurants do it, if that's the taste you're trying to replicate at home.

Well most gas ovens simply have numbers to represent actual temperatures. This is so as to confuse visiting Americans :LOL:.

My electric cooker (gas hasn't reached my little corner of Cornland yet) just has dash marks....they are there to confuse me.
