I also planted 8 fruit trees this year. Yesterday I bought a Star fruit tree, the price was good.. 6 dollars, so I said why not.

I assume the lima beans you "knew" were fresh. As you can read in that recipe it uses dry lima beans. Dry legumes lose their greenish color when dried.
In case you need further clarification here are some cowpeas I am shelling. They are next to their corresponding pods. As you can see the ones that began to dry on the plant have mostly lost their green.
