Between WWII through Vietnam, US government fed it to USMC as "pork and bean" in C-RAT. After that, I guess Marines got sick of it.

I personally think it's a shame that Peru, being the world's sole source, banned such a fine agricultural product.

The Lima beans I knew were all green, Hmmmmm?

I assume the lima beans you "knew" were fresh. As you can read in that recipe it uses dry lima beans. Dry legumes lose their greenish color when dried.

In case you need further clarification here are some cowpeas I am shelling. They are next to their corresponding pods. As you can see the ones that began to dry on the plant have mostly lost their green.
