I found the C&D bayou night considerably sweeter than bayou morning. The sweetness was weighed up by lack of that unmistakably bayou morning taste of salt earth and black olives. A good smoke, unfortunately it got a bit gurgly. properly dried but maybe the cold weather made condensation more of an issue..
