Tenderness to any part of the mouth or pain in the tongue can't be remedied by a different blend, though some blends do indeed bite. For instance Mac Baren, which is notorious, with the exception of Navy Flake; and there are probably others that smoke normally in their line. Everything else, without exception, that I've smoked of theirs has bitten me.
As an aside bite only refers to a chemical reaction in the mouth.
The roof of your mouth, however, clearly, is reacting to smoking too fast. For me smoking slowly has only come very slowly. The correct method is to sip, not draw, on the pipe. Smoke as slowly as you possibly can be spacing your sips, and truly sipping. This goes against our inborn wish to suck, and the flavorful smoke goes against taking the minimum. We think more but really, in pipe smoking, the ideal is less.
