I'm not telling anybody to eat pepperoni pizza but truth is about pepperoni pizza is if the pepperoni isn't cooked before the pepperoni is cooked on the pizza it's an oily miscalculation.

Not all pepperoni is created equal. Nor with equal amount of oil potentially released by heating.

Of course these days in snobbier pizzerias that wouldn't dream of topping pizzas with "pepperoni", they offer spicey "soppresata"--which is a lot like pepperoni, only more expensive.

I don’t pre-cook pepperoni for grease abatement but I do with sausage.

Probably depends on the pepperoni but I’ve never had a problem with any of the brands I’ve used and I pave the pie with pepperoni.

Cupped pepperoni with the rims cooked to crispness. Mmmmm.

Prices of pizza from pizza chains-which I prefer over frozen-have gotten so high we may order 1 once a year. Heck, Red Baron is about the only frozen pizza I typically can afford as frozen pizza prices have really risen too. Though will say Red Baron is tastier than many frozen pizzas.

Unless money is tight. Then your pepperoni pizza has cubes of pepperoni on it!
Or you could live the high life with one of my favs:

Not only is the pepperoni sliced, it's diced and julienned!

And it's on snobby flatbread!

It's actually an appetizer at BJs Brewhouse.

As I remember growing up in NYC, you order the slice, and when it comes out, fold that slice in half lengthwise. You can see all the red grease from pepperoni dripping down the fold in crust. I always thought that was a sign of a good slice.

It all starts with a nice Omeprazolè or a fruity finish Pepcid AC.
I take omeprazole (blue/clear capsule) every day....but not sure why. Could be because I lost a load of blood a couple of years ago

Oh, and for what it's worth, I always used to drizzle extra virgin oil on my home made pizza just prior to throwing it in the oven.....lovely!

Jay.
