This is a terrific topic for a thread. Some of the most popular would make my list for some of the worst films made, ever, but that's a reality - one man's meat, etc, etc.
One of the most remarkable films of the last 20 years is Clint Eastwood's Hereafter, a brilliantly delicately balanced story, told in a way that only a consummately gifted storyteller could pull off. I love and admire Eastwood's work and to me, this one stands at the pinnacle.

I don't know how I could have left out Donnie Darko. I've only seen the director's cut, but definitely a favorite.

A few others I will add are:

Knowing
The Mothman Prophecies
House of Sand and Fog
Blood Diamond

Winnipeger

I probably have very different tastes in movies, but some of mine would be:

Adaptation (2002)
The Tree of Life (2011)
Birdman or (The Unexpected Virtue of Ignorance) (2014)
I'm Thinking of Ending Things (2020)

Edit:

Forgot to mention:

The Departed (2006)
Shutter Island (2010)

There Will Be Blood (2007) is also on my short list.

Oldboy (2003) is on the list, maybe Eternal Sunshine of the Spotless Mind (2004)? Big fan of both.
More importantly, Kung-Pow: Enter The Fist (2002).
