I transferred all of my tobacco to mason jars, screwed the lids tight and I placed them in a cabinet in a cool, dry place. However, none of the jars are filled to the top there's a little pocket of air in each one. Will the tobacco stay moist as long as I keep the lids screwed tight? If not, what else do I have to do?

You're good to go as is. Some say that leaving the air will help the aging process along. Either way if the seal is tight you won't lose moisture.

I usually fill as full as I can.. But, I dont think you will have any issues at all. Your baccy should seal up just fine. I have a few jars that I let an inch of air or so at the top, and they have sealed up just fine.
