Can anyone tell me if they have any experience does the size of the tin make a difference when cellaring tobacco. 8 oz tin compared to 2 oz tins, just curious if one or the other might age better in the different size tins.

I don't notice much difference. I love the 8 oz tins of the GLP line. Once I open one, I do one of two things.
I either place a piece of wax paper between the tin and the lid. This seems to keep the tobacco in a smokable condition for about 6 months with regular use, about a year if I leave it. Or, I divide the contents into those short, half pint jars. I do this with tins I'm less likely to go to regularly. I have a bunch of Union Square from 2009 in 8 oz. tins and it has all been very nicely preserved and aged when opened.
