Had a group of 12 over last night with 4 of us lighting pipes up and enjoying some Wessex flake Harris brought. Three racks of ribs cooked on the Big Green Egg, some Italian sausage, chicken, Pyrats Rum, and some great company made for an excellent night...(OK- that's more than three of my favorite things, but it was great!)

Best smoker on the world- Started the fire around noon with a hardwood charcoal, Threw the ribs marinated in Stubbs Marinade in the smoker for 5 hours at 280 degrees, and not a bone left at the end of the night...When you're finished, you shut down the drafts and can reuse the charcoal for the next time. Normally only burns a couple of pounds of charcoal in 5 hours...

Good stuff. Zack. I still smoke on my Weber 22inch, but I've been getting into it enough that I'm thinking about grabbing a WSM or at least an prefab partition to get more space out of the Weber.
And now you made me hungry for ribs at 9am.

Looks like a great time was had by all Zack!
I smoke on a BDS (Big Drum Smoker) with Jerk anything being my favorite followed by BRITU and Raichlan's Rendezvous clone.
Right now I'm loving Lane's BCA and when it comes to rum, nothing has tasted more consistently delicious throughout the years than

Zack, thanks again for a great night, that smoker of yours rocks. The ribs were fantastic as were the sausage and chicken. Glad you liked that Wessex Brown Flake, did you smoke the Peterson Plug with Val, how did you like that one?

Zack - I am surprised Harris could chew ribs with his sensitive little mouth. Did you provide him with a special fork so as not to irritate his sensitive teeth?

First impressions on the Peterson Plug were a little harsher than the Wessex....but about halfway down, it seemed to mellow out....or maybe it was just the rum kicking in...
Harris- You actually ate those little chunks of meat? That was some of the leftovers that were sitting out for a couple of days that Greta was going to put out for Dolce....Hope you're feeling OK today....
Peck, What can I tell you...we try to make accommodations for our guests...(especially when they show up with good tobacco and wine)

zack, lol. The Peterson is a much stronger blend than the Wessex and it sounds like it still needs some age to round it out. I have not smoked it in a while figuring it will mellow a bit after a few months. It could also be you are just a wuss and it was perfectly fine. lol
